Ingredients for Samwat Ke Chawal Ki Kheer Recipe

  • Samwat ke chawal 1/4 cup
  • Milk 5 cup
  • Almonds 10
  • Raisins 10
  • Sugar 1/2 cup
  • Green cardamom powder 1/4 teaspoon

Step 1

Soak almonds in half a cup of hot water for five minutes. Drain, cool, peel and shred. Keep aside. Wash rice thoroughly in plenty of water. Drain. Wash and drain raisins. Take rice and milk in a deep pan and bring to boil. Lower the heat and simmer, stirring occasionally, till the rice is fully cooked and the milk has reduced to half.

Step 2

Add sugar and cook till the sugar has fully dissolved. Add raisins and cardamom powder and cook for another ten minutes. Garnish with shredded almonds and serve hot or chilled.

Golu is the unique festival of dolls. Golu, also known as Kolu, Bombe Habba (Kannada), Bomma Gullu (Malayalam), Bommai Kolu (Tamil) or Bommala Koluvu (Telugu), is a toy festival celebrated during the time of Navratri in Southern India. Navaratri is a time during which many homes in India are full ofcolors, light, music, and food. People greet their loved ones with gleaming dolls, colorful Kolam (Rangoli), lighted lamps, and traditionally dressed women and girls chanting slokas and singing.

As per the traditions, the first dolls to adorn the Golu should be “Marappacchi”, a pair of male and a female dolls. There are many stories on Golu festival. In earlier days it was done to make adolescents aware of gender morphology.

It also has a significant connection with agriculture in order to encourage desilting of irrigation canals, Golu was celebrated to create demand for clay materials. It is symbolic of the feminine power and symbolizes that everything on earth has one creator. This festival is celebrated to acknowledge their sacrifice. Golu dolls are made, by moulding a clay model of the sketch from the book with a knife-like tiny but thick ‘tools’ made of bamboo and rosewood. The tiny clay dolls with chiselled nose and well-defined features are readied to make moulds for the festive season. Each year moulds for unique dolls are made and sold  to doll makers. Barnyard Paniyaram:


Shastha Barnyard Millet - 1 cup
Shastha Brown Rice - ½ cup
Black Urad dhal - ½ cup
Green chillies, chopped - 3 nos
Ginger, grated - ½ tsp
Asafoetida - small pinch
Salt as reqd


Soak the Shasha Barnyard millet, Brown rice and dhal for 4 hrs. Remove water and grind to coarse paste by adding little water, add green chillies, ginger, salt. Mix well and let the batter ferment for 3 hrs. Heat the kuzhi paniyararn pan in rnediurn heat add few drops of oil pour the batter and cook on both sides. Serve with onion tomato chutney and a glass of filter coffee.

Little Millet Cutlet:


Shastha Little Millet - ½ cup
Potatoes - 3 nos
Green Chillies - 2 nos
Ginger finely chopped - 1 tsp
Pepper powder - 1 tsp


½ cup Shastha Little millet add 1.25 cups of water and pressure cook for 2-3 whistles. Then add 3 Boiled and mashed potatoes, mix well all the ingredients. Make patties out of this mixture. Heat the pan with 2 tsp oil then shallow Fry culet till they are golden brown and crispy.

         I remember eating jaggery after every meal when growing up and enjoying the sweet flavor that stays in the mouth for a long time. It is true that processed sugar is easy to mix and instant energy giver but natural sweeteners like jaggery are far better than white or brown sugar. Jaggery is made from the juice of sugarcane, heated to produce thick crystals. It contains sugar in sucrose form and is used in many food products as a sweetening agent. It is considered healthier than refined sugar as certain plant phytochemicals and minerals are preserved in it.

Apart from sweet brown colour crystals, people call it with different names in different languages.  The most commonly and popular names of jaggery are  “Gur" in Hindi, 'Bellam' in Telugu, “Vellam” in Tamil, “Sharkara” in Malayalam, “Bella” in Kannada, and “Gul” in Marathi.

Three step process - extraction, clarification and concentration

  1. Press the Sugarcane through machines to extract all juice or sap from it. This process is termed as ‘Extraction’.
  2. In Clarification’ process all juice is collected into large containers so that all thick substances can sit in the bottom and then strained to produce a clear liquid.
  3. In Concentration stage, In a heavy bottom flat pan, the juice is boiled for hours and stirred continuously. While stirring, impurities are skimmed off the top until only a yellow, dough-like thick paste remains in the pan.
  4. Now the thick paste is transferred into the moulds to get it cool and settle into a shape.

The colour of the jaggery ranges from golden brown to dark brown in colour, depending on the quality of sugarcane, juice and its clarification process. However, adding jaggery to your daily diet provides many health benefits and essential nutrients that you may not have thought of.

Indian food is mostly healthy with subtle flavors and aroma. One thing that remains common in most Indian cuisines is the inclusion of side dishes like pickles, chutneys or papads. Vadams, commonly used in South India, are almost synonymous with “Papads”. These are usually sun dried preparations, which are made from one or more of the following ingredients: rice, lentils, potato or sago. These need to be deep fried in oil for eating. They are usually served as accompaniments to a meal in India, but they are great as snacks or appetizers. Shastha Elai vadam are made from rice. We make a batter with soaked rice and let it ferment. They are then steamed in the shape of small pancakes (4″-5″ circles). “Elai” means leaves in Tamil. These vadams are called elai vadams because, in earlier days these were steamed on leaves instead of the stainless steel contraptions used today.

It seems to be a dying food but we love it in our house. Its a time-consuming activity, but worth the effort. Basically, it is a batter of rice and sago, mixed with green chillies and cumin. It is ladled over banana leaves and steamed until done. Most of the Indian housewife makes large quantities of Vadam and dry it properly and store it and use it even for 1 year.

Normally in the tamil month Masi, vadams are made because it is the starting season of Summer. Morning time is the best time for doing vadam as the sun won’t be very hot. Vadam is liked by all age groups in any family.

Drying the vadam:

Another good thing about these Vadams is that they do not need to be dried in the sun. They dry up just fine in your bedroom! And they dry up pretty fast, just leave them out overnight and they will be almost dry. Then just let them be, spread on a plastic sheet for 1-2 more days. Then pack them up!! That’s is!!
